Fresh or Canned

I loved reading everyone’s comments from my previous post. If anyone needs a little uplifting, check them out!

After an early morning workout, I came home to a bowl of oats with grapefruit on the side.

I used 1/2 cup oats, 1 cup almond milk, vanilla extract, cinnamon, and honey. A few months ago, I never would have been able to eat oats without brown sugar. Slowly, I started adding less and less sugar and I’ve found that I actually enjoy the simple flavors.

Now, some flavors I don’t enjoy as much…

Always on the hunt for a food bargain, I decided to get a bunch of canned veggies. They were $1 each. I didn’t even manage to get a picture of the canned asparagus. I know, what was I thinking? (Side note, the diced tomatoes were really good.)

Needless to say, these veggies were pretty mushy when I started cooking them.

I think I’ll stick with canned beans and corn for now. 🙂 Here’s a few of my meals from the past few days all incorporating fresh foods:

Salad with jalapenos, avocado, tomatoes, beets, salsa + nuts and raisins
Quinoa and veggies + nutritional yeast, salt, pepper
Quinoa and veggies + nutritional yeast, salt, pepper, garlic
Vegan "pancakes" + strawberries

Question of the day: Are you a fan of canned veggies? Do you buy mostly fresh or frozen veggies?
