Sitting here in the airport nibbling inhaling my ThoughtFULL Superfood Bar and seaweed snacks, I can’t help but feel pleased from the past couple days I spent working with a stellar startup in Texas.
Health was at the forefront throughout the day, served with a side of comforting coconut tea.
And a proclivity for a smooth blend of creativity.
Startups are my chi. They just complete me.
Fast paced energy and feelings of determination. Wit to crack the tightest of minds. Uninhibited actions against the norm.
Warning: your bags will be heavy, but with the right grip, you’ll carry it outside your comfort zone in no time. 🙂

In between working, I got to hang out with one of Joy Yoga’s Hatha Flow instructors, Kat Ayers as she showed me how to make her superfood ThoughtFULL Bars. These bars can be a quick go-to snack, especially after a tough workout.
Kat started making these bars because she was lacking protein in her vegan diet.
All ingredients are organic and natural, and the best part? It tastes almost as good as my chocolate brownie! Much healthier. 🙂
As a yogi myself, I was all about an all natural organic snack.
For Kat, nutrition is about finding intention through reading label ingredients, thinking about what you put into your body and actively changing thought patterns through releasing toxic behaviors.
Whatever your self-limiting thought is, reverse the thought pattern.
Reaffirm weakness into strength.
ThoughtFULL Bars
Ingredients (available at Trader Joe’s except Maca which is at Whole Foods)
- 1 ¼ cup Almond butter
- ¾ cup Raw Honey
- 4 Tbsp Organic Hemp Protein
- 2 cup Organic Gluten Free Oats
- 1 Tbsp Organic Maca Power (Superfood of Incan warriors, female mood stabalizer)
- 1 Tbsp Organic Cold Milled Flax Seed (1400 mg Omega 3)
- 1 tsp Vanilla Extract
- 1/4 tsp Ground Nutmeg
- 1/4 tsp Allspice
- 1 tsp Coconut Oil
- 3 cup Oats
- 1 cup Pecans
- 1 cup Walnuts
- 1 Tbsp Raw Cacao Nibs
- 1 Tbsp Chia Seeds
- 1 cup Almond Milk
Directions
In a bowl, combine first 10 ingredients in a pan. Transfer pan over to stove and heat on low until all melted together, roughly 1 minute. In a blender, combine next 4 ingredients until well blended and add to the bowl. Add chia seeds to the bowl. Add almond milk. Mix the batter for a couple minutes.
Lather coconut oil on a 9×11” pan and pour batter into pan, pressing firmly down. Bake at 350 for 10 minutes. Cool for 5 minutes, cut into 12 squares and enjoy!
