A Marvelous Memorial Monday
How was your Memorial Day weekend?
I spent mine attending a gorgeously rustic wedding and come Monday, it was all about relaxing pool side in celebration.
The wedding was one sweetly decadent affair.
Hor dourves, happy hours, wine tastings, polo matches, sear sucker suits, bow ties, and a expansive pallet of color.
Did I mention the wedding was filled with photographers, writers and creators? Talk about a fun bunch. The ideas and visions were free flowing throughout the weekend.
After a full night of dancing, lying by the pool was the necessary ingredient to follow.
After a long workout, of course. Indulge after enduring work.
Then it was time to cook up some heat in the kitchen. Bring on the American cookout.
My roommate made the chicken while I grilled pineapple and veggies- zucchini and eggplant. Eggplant is a funny veggie to work with, so I took a simple cheesy approach.
Lightly brushed with olive oil, sprinkled with garlic salt and fresh pepper, and topped with cheese. When serving unique veggies like eggplant, I like to add a tasty ingredient to distract from the odd consistency. #bonappetit
That grilled pineapple though…
After you remove the prickly skin and crown, just slice and throw it on the grill for a couple minutes each side. It [airs beautifully with barbecue chicken.
But the real highlight was the stellar company. Good grub and fab friends.
