Veggie Lover
“What are you cooking?”
“I’m not exactly sure.”
This has been a popular response of mine. At one point in the kitchen last night, I said I was making sweet potato soup. That definitely changed!
I had an onion, sweet potato, black beans, and carrots on board. My giant bag of quinoa later made an appearance and I opted to make a pot of quinoa and veggies.
I love creating things like this in bulk to eat for multiple meal periods. It was pretty easy to throw together too. I cooked the carrots and onions for decades on low heat for half an hour or so and seasoned them with dill and pepper.
Meanwhile, the sweet potato was cooking away for an hour in the oven. After everything was cooked, I added all of the veggies to the pot of quinoa. I used curry powder and cinnamon as a secret flavoring tip and loved the combination.
I also cooked a bag of frozen edamame. Yum.
Oh and my dinner last night was anything but normal and planned.
I combined veggies with leftover vindaloo and spiced it up. I also had some fruit and carrots on the side. Sounds good to me!
I’ve learned a valuable lesson in the kitchen- combining a bunch of vegetables and grains always yields to something good.
Clearly I’m a veggie lover. But don’t worry, I didn’t end the day in complete nutrition perfection.
I finally made one of these microwavable made-from-scratch desserts that I loved and would actually serve others! I’ll be sure to post the recipe tomorrow. 😀
