Salad World
Sometimes making a salad for dinner can be boring. Is it just me or are the salads at restaurants so much tastier than the homemade versions? In efforts to eat healthy and enjoy tasty foods, I’ve been working on my salad skills.
I used mixed greens and cucumbers as the base and added red and yellow peppers on the outside (I like the taste of plain peppers and it looks cool too!). I sprinkled cheese on top and drizzled my favorite homemade Dijon dressing over it. To make the Dijon dressing, I just mix about a teaspoon of Dijon mustard, add red wine vinaigrette salt, pepper, a dash of honey, a little garlic, and finally olive oil all to taste. For a little extra protein, I had leftover salmon on the side. My Mom makes the best Asian Grilled Salmon by Ina Garten. I figured the Asian flare from the salmon wouldn’t mix very well in my fiesta-themed salad, especially after I added some Mango salsa to it. 🙂
After dinner I had a peppermint bark Ghirardelli square for dessert and watched the People’s Choice awards with my roomie. Did anyone else tune in? It was entertaining enough to keep me out of the kitchen but I’m really excited for the Oscars. 😉
