Another Night, Another Brownie
I had a very relaxing evening last night. Here’s what I threw together for dinner:

I added lots of spicy seasonings along with salsa, a sweet potato, and jalapenos. Then I heated up some refried beans to accompany the veggies.

To top the mix, I used Chobani plain Greek yogurt (in place of sour cream) and more salsa. (No such thing as too much salsa, of course.)

I had a lot of leftovers too- the best way to go! Dinner- check. Lunch the next day- check. And on to dessert.

I just can’t help myself. These brownies are so good and I’m getting better results each time I make one. Just what I need, right? 😉
This was definitely my best dessert so far. I used this recipe as a base and swapped in coconut flour for whole wheat flour, applesauce for yogurt, used a little less sugar, and didn’t have any chocolate chips. I also mixed the ingredients in a separate nother bowl, which helped the appearance! Then I topped it all off with sprinkles of course. 😀
I’m thinking I’ll take a break from my brownie mug infatuation for a few days.
