A Karaoke Night
One of my best friends, Sara came over last night for dinner and drinks. We decided to cook a healthy version of stir fry, which we used to make all the time in college. It’s also a great meal to throw in whatever veggies you have on hand.
Sara was in charge of the veggies while I handled the noodles. Very difficult stuff. 😉
I used a bag of frozen snap peas, onions, carrots, and mushrooms for the veggies and we mixed in an egg for some extra flair. For the noodles, I used a bag that I got from my parents house that came from a little Asian market. The noodles were actually meant for pho so the noodles were a little sloppy. We usually use brown rice but I didn’t have any on hand. We topped our meal with a delicious General Tso sauce from Trader Joe’s.
I also added a ton of red pepper flakes and some Sriracha to kick it up a notch. Can you tell I like spicy foods?
For dessert, we enjoyed some chocolate covered pomegranates, courtesy of my roommate Molly.
We then barred the cold to go out for one of our friend’s last night before moving. So naturally, we went to Baja Bean for karaoke! Let me tell you, karaoke is really fun once you have a few drinks forget about making a fool of yourself.

I clearly liked it even though I’m no Mariah Carey. I’ve always wanted to be a rawkstar because really, what cooler job is there? Dancing, singing, and partying all while burning calories- sign me up!
