    Another Night, Another Brownie

    I had a very relaxing evening last night. Here’s what I threw together for dinner: I added lots of spicy seasonings along with salsa, a sweet potato, and jalapenos. Then I heated up some refried beans to accompany the veggies. To top the mix, I used Chobani plain Greek yogurt (in place of sour cream) and more salsa. (No such thing as too much salsa, of course.) I had a lot of leftovers too- the best way to go! Dinner- check. Lunch the next day- check. And on to dessert. I just can’t help myself.     “If you want to be happy in a million ways…”

    For the holidays  you can’t beat home, sweet home! This freezing cold weather has gotten me in the mood to listen to Christmas tunes. (I love Christmas music so any excuse to listen to it works for me!) I am feeling more awake than usual because I managed to wake up at 5:30am! (Who am I?)
